The world-famous "Pacamala" grown by Injerto Farm in Guatemala - a selection of different flavors

Guatemala

El Inherto Farm

El Injerto is one of the most famous coffee farms in Guatemala, having won first place many times at international coffee competitions, and is highly regarded by baristas around the world. We have prepared coffee from the Pacamara variety, which is particularly highly regarded for its unique fruity and complex flavor, that has been refined using a different selection process.

Pacamara

Pacamara is a variety that was created by artificially crossbreeding Pacas and Maragogype at a research institute in El Salvador. It inherits the large bean size and good flavor of Maragogype, and is famous as a specialty coffee. You can enjoy its distinctive flavor.

Washed

Washed coffee is a method of processing coffee. After the coffee cherries are harvested, they are mechanically (manually or automatically) peeled to remove the slime (mucilage) that adheres to the parchment coffee. This method has different names depending on the country or region, such as fully washed or mechanically washed, but there is no unified standard.

Natural (non-washable)

Natural is a method of processing coffee. After harvesting the coffee cherries, they are dried without removing the pulp, and then the pulp and parchment are removed at the same time. This method is characterized by transferring the flavor to the coffee beans by drying them with the pulp still attached.
