■ Huehuetenango area

El Injerto Uno Farm, located in the village of La Libertad in the western part of Huehuetenango Department, is surrounded by a rich natural environment, and the temperature, precipitation, climate and fertile soil allow it to produce delicious coffee.

■ Fully ripened coffee harvested by skilled craftsmen

El Injerto Farm is located in the mountainous region of southern Huehuetenango Department, near the Mexican border. This farm pays close attention to the natural environment, using earthworms to compost the pulp that is removed during the selection process as organic matter, and using water sourced from a spring in the mountains. At the time of harvest, highly skilled and experienced harvesting staff identify fully ripe coffee cherries and pick them by hand. The carefully harvested coffee cherries are then transported to a clean processing plant where they are processed using clean water. Experienced staff are also assigned as responsible persons for the selection process, and they are committed to thorough quality control.

After the coffee cherries are harvested, the flesh is peeled using a machine (either manual or automatic) and the slime (mucilage) that adheres to the parchment coffee is then removed.
The names vary depending on the country and region, such as free washed or mechanically washed, and there are no uniform standards.
