Washed carbonic maceration. Recently, coffee has been produced that incorporates the wine brewing process. This "Illumination" is one of them. Fermentation is promoted in an airtight container filled with carbon dioxide, which results in a different aroma and flavor compared to traditional washed coffee. Pine, green apple, juicy tactile, refreshing, but with a lingering sweetness for a sweet finish. The flavor gets deeper every year. Deborah Farm
Located at over 1,900 meters in the towering Volcano Chiriqui mountains, Finca Deborah offers a pristine and beautiful setting where Geisha is grown in the shade. It is the highest and most remote coffee plantation in Panama. At this altitude, nighttime temperatures can drop to as low as 10°C.
The high altitude and cooler temperatures slow the trees' growth patterns and force them to expend more energy, resulting in harder, denser beans - a rare environment for all coffee varieties.
At Finca Deborah, Geisha, one of the world's most complex coffee varieties, doesn't just grow, it thrives.
