Deborah Farm
Located at over 1,900 meters in the towering Volcano Chiriqui mountains, Finca Deborah offers a pristine and beautiful setting where Geisha is grown in the shade. It is the highest and most remote coffee plantation in Panama. At this altitude, nighttime temperatures can drop to as low as 10°C.
The high altitude and cooler temperatures slow the trees' growth patterns and force them to expend more energy, resulting in harder, denser beans - a rare environment for all coffee varieties.
At Finca Deborah, Geisha, one of the world's most complex coffee varieties, doesn't just grow, it thrives.
Selection method: Natural Anaerobic
The fully ripe red Geisha cherries are harvested, washed, and fermented in a covered tank without exposure to outside air. As the fermentation of the cherries progresses, the oxygen concentration in the tank decreases, and the coffee cherries in the tank undergo intracellular fermentation (anaerobic fermentation), which is different from the usual process. This produces a rich, sweet flavor and a fine acidity.
