Santuario Sur Farm
Santuario Sur Farm was conceived by Luis Paulo, president of Carmo Coffees, and launched with the cooperation of Camilo, who produces specialty coffee in Colombia. It was named after the Santuario Farm in Colombia, which is also owned by Camilo. It cultivates over 30 varieties, including rare varieties, and is an advanced coffee farm using the latest technology in Brazil.

Santuario Sur Geisha Natural
Before harvest, the Brix value of the coffee cherries is checked to ensure they meet the standard, and they are 100% hand-harvested by experienced pickers, with only fully ripe red cherries being picked.
- The dirt from the harvest is washed away with water, and the fruit with the pulp still attached goes into the fermentation process.
- Fermentation uses natural yeast that is extracted, selected and developed from the Geisha variety grown exclusively by Calmo Coffee.
- After fermentation, the cherries are dried on African beds, which are covered with roofs that only let in UV rays.
