Natural anaerobic fermentation. Fermentation takes place in an airtight container with no oxygen present, resulting in innovative aromas and flavors that overturn your image of coffee and make you ask, "Is this really coffee?" Expectations are high because it is made from carefully selected coffee cherries from Deborah Farm. It reminds you of rum, ripe plums, and rich, mellow coffee, and is also packed with the juiciness of tropical fruits. The balance of the rich flavors is miraculous! Deborah Farm
Débora Farm is located in the Volcan area of western Panama, in a forest at an altitude of over 1,900m. This area is also known as the "Valley of Flowers" and "Eternal Spring", and is rich in natural environment. The owner, Mr. Jamison, has the idea of growing coffee in harmony with nature. Most of the coffee grown is a variety called Geisha, which is known as a representative of high quality coffee due to its unique flavor. On the other hand, it is said to be difficult to grow because it is vulnerable to pests and diseases, but Débora Farm has a cool climate with a temperature difference of less than 10 degrees Celsius at night, so the risk is low. The trees take time to grow, but the temperature difference between day and night allows the coffee cherries to mature slowly, so it is possible to produce hard, high-density, high-quality coffee that makes the most of the potential of Geisha.
Selection method: Natural Anaerobic
The fully ripe red Geisha cherries are harvested, washed, and fermented in a covered tank without exposure to outside air. As the fermentation of the cherries progresses, the oxygen concentration in the tank decreases, and the coffee cherries in the tank undergo intracellular fermentation (anaerobic fermentation), which is different from the usual process. This produces a rich, sweet flavor and a fine acidity.
