COE (Cup of Excellence)
A coffee competition aimed at discovering and evaluating high-quality coffee from around the world and providing fair recognition and rewards to producers. Held annually in certain countries, only the highest quality coffee beans selected through a rigorous judging process by experts are awarded the "Cup of Excellence" title. The winning coffee is then put up for auction online and purchased by the highest bidder. As it is sold at a higher price than regular coffee, it helps motivate producers, provides financial support, and improves working conditions.

The capacity per cup is 15g, which is more than that of regular drip coffee. Not only can you extract a lot of coffee, but you can also expand the range of recipes. For example, you can make a rich extract with a small amount of hot water and make it clear by adding more hot water. Or you can extract it at a slightly higher temperature to get a rich but clear taste, and enjoy it according to its characteristics, preferences, and how you drink it.

Don Egidio Rodriguez Farm
Don Egidio Rodriguez Farm has been here since 1970, and the environment here is perfect for growing the highest quality cherries, including rich volcanic soil, rainfall, temperature, and high altitude. Currently, Mr. Egidio and his children, who took over from the founder, Mr. Vital Rodriguez, run the farm with love and passion to harvest ripe cherries. The efforts that have been passed down for more than 50 years by two generations of parents and children have come to fruition, and Don Egidio Coffee won 30th place in the 2023 Costa Rican Cup of Excellence. This month's coffee is a special lot that Ogawa Coffee won alone.
Selection method: Anaerobic fermentation
The fully ripe red Geisha cherries are harvested, washed, and fermented in a covered tank without exposure to the outside air. As the fermentation of the cherries progresses, the oxygen concentration in the tank decreases, and the coffee cherries in the tank undergo intracellular fermentation (anaerobic fermentation), which is different from normal fermentation. This produces a rich, sweet flavor and a fine acidity.

Trebolillos Farm
Founded in 1808, the Trebolillos farm has been producing high-quality coffee for three generations since Antonio Martinez Ruiz purchased the farm in its current location in 1950. The current owner, Ms. Alejandra, started growing coffee in 2011. She began organic farming that year and won fifth place in the Cup of Excellence in 2014. Since then, they have adopted biodynamic farming methods and promoted sustainable agriculture since 2017.
Their efforts paid off, with the coffee coming in 17th at the Mexican Cup of Excellence in 2023. This month's coffee is a special lot that was won solely by Ogawa Coffee.
Selection method: Washed
After the coffee cherries are harvested, the flesh is peeled using a machine (either manual or automatic) and the slime (mucilage) that adheres to the parchment coffee is then removed.
The names vary depending on the country and region, such as free washed or mechanically washed, and there are no uniform standards.
