■ History of the farm

The farm's history dates back to 1808. In 1950, my grandfather Antonio Martínez Ruiz inherited several farms and purchased the Coatepec farm where we currently work. Antonio exported most of the coffee to Germany, but after a few years, my father decided to start selling within Mexico.
I started helping my father with his farm work in 2011. That same year, we converted 9 hectares of land to organic farming. In 2014, this coffee won 5th place in the Cup of Excellence, which prompted my father to convert the rest of the farm to organic farming as well.
In 2016, I attended a biodynamic meeting in Mexico and learned more about biodynamic farming, and then in 2017, I started using biodynamic farming on my farm.
My sisters and I inherited the farm and transformed the organization to focus on socio-environmental activities.
Currently we are working with Gaby Puente Fano, who is helping us adopt a corporate form of organization in agriculture and use many indicators and databases to analyze the land and make it more accurate and productive. We want to export some of the coffee we produce, but the rest will be sold in my cafe because I want to offer Mexicans the best quality coffee.

Veracruz was where coffee was first grown in Mexico, and Coatepec received its Designation of Origin in the 20th century. Coatepec coffee is recognized worldwide as being of the highest quality, thanks in part to its ideal climate (warm and foggy).

Selection method: Washed

After the coffee cherries are harvested, the flesh is peeled using a machine (either manual or automatic) and the slime (mucilage) that adheres to the parchment coffee is then removed.
The names vary depending on the country and region, such as free washed or mechanically washed, and there are no uniform standards.
