■Los Alpes Farm
Los Alpes Farm is located at the foot of the Santa Ana Volcano in the west of El Salvador. The area is blessed with volcanic soil that is said to be ideal for growing coffee, as it is rich in nutrients. At this farm, coffee is grown using methods that do not rely on pesticides or chemical fertilizers. The farm is also covered with shade trees, and the coffee trees are pruned to ensure that they receive the right amount of sunlight. Mauricio Battle started the farm in 1970, and Aida Battle is currently running it as the fifth generation owner.
■ Ida Battle
Aida, the owner of the farm, is particularly particular about the ripeness of the coffee cherries. The staff who harvest the cherries, known as pickers, go back and forth within the farm many times during the harvest season, picking only the fully ripe coffee cherries by hand. Aida's standard for ripeness is "purple red". To ensure that the cherries are harvested at the perfect ripeness, she sometimes goes into the farm herself and shares them with the other staff. "Coffee is my lover," says Aida. The coffee with the rich flavor unique to Los Alpes Farm is born from the farmer's long-standing passion for coffee.

■The history of Ogawa Coffee and Los Alpes Farm in El Salvador
One of the farms that Ogawa Coffee came across 20 years ago while visiting and working with coffee farms around the world was El Salvador Los Alpes Farm. In 2003, Ogawa Coffee was the sole winner of the "Cup of Excellence" coffee competition held in the country, and this is how the relationship with El Salvador Los Alpes Farm began. The owner of the farm, Aida Battle, visited Ogawa Coffee for the first time, and in 2006, the company launched "Aida Grand Reserve" at its directly managed store, and used the sales revenue to support the recovery of coffee farms that had reduced production after the Santa Ana volcano eruption in El Salvador in 2005. Even now, Ogawa Coffee buyers regularly visit the farm, and together with the owner Aida Battle, they continue to work to deliver delicious coffee.

After the coffee cherries are harvested, the flesh is peeled using a machine (either manual or automatic) and the slime (mucilage) that adheres to the parchment coffee is then removed.
