■Environmentally friendly coffee making

The West Valley region where Santa Lucia Farm is located is one of the famous coffee growing areas in Costa Rica. In Costa Rica, where environmental protection is highly conscious, coffee farms are required to take environmentally friendly measures such as leaving a certain amount of natural areas other than coffee trees on the farm site and purifying used water before discharging it into rivers. Santa Lucia Farm also practices sustainable coffee cultivation that takes the surrounding environment into consideration, such as planting shade trees that protect the coffee from strong sunlight and are effective in maintaining the soil, and using natural spring water. The farm owner built a selection facility near the farm and made efforts to make the process from harvesting to refining smooth, working to improve the quality of the coffee he produces, and also allows neighboring farms to use the facility, contributing to improving the quality of coffee in the entire region.

■ Selection method: Pulped natural

This is one of the refining methods, in which the flesh of the coffee cherries is peeled and then dried while leaving the mucilage that adheres to the parchment coffee.

Also known as "honey processed", it is called by different names, such as "yellow honey", "red honey" and "black honey", depending on the amount of mucilage removed.
