We will be selling "Earl Grey Scented Gateau Chocolat", which was jointly developed with Ikenobo Junior College. In order to explore the possibilities of new food using the plant-derived material "cellulose nanofiber", we carried out an industry-academia collaboration with Ikenobo Junior College with the cooperation of "Kyoto Chiesangyo Sozo no Mori", a general incorporated association that works to develop industrial human resources and promote industry-academia-government collaboration. After eight months of trial and error, we have decided to commercialize the student's idea.

The rich aroma of Fairtrade Earl Grey is trapped in a dough made from a blend of white and dark chocolate. This gateau au chocolat has a moist, crumbly texture and just the right amount of sweetness.

Jointly developed by Ikenobo Junior College and Ogawa Coffee
Based on the ideas of Professor Shigehisa Horie and his students from the Confectionery Creation Course of the Department of Environmental Culture at Ikenobo Junior College, we worked with the pastry chefs at Ogawa Coffee to develop sweets that make the most of the characteristics of this ingredient.
The final winner from among the original sweets developed by the students was the "Earl Grey Scented Gateau Chocolat," which is a cake made from a blend of white and dark chocolate, with the rich aroma of Fairtrade Earl Grey trapped inside. You can enjoy the moist texture and crumbly feel.

[Cellulose nanofiber (CNF)]
The "cellulose nanofiber" used in this product is sourced from forests that are managed sustainably with little environmental impact, and is a material made by finely breaking down the fibers that make up wood to the nano level, giving it excellent properties such as emulsion stability, water retention, and shape retention. We worked on developing sweets that make use of the properties of this material.
