■ Coffee from Bahia, Brazil

Coffee production in Brazil was previously mainly in the states of Paraná, São Paulo, and Minas Gerais, but due to climate change, frost began to fall in the southern regions, and coffee production gradually shifted to the north. Bahia state, where this coffee is grown, is a relatively new production area that began in the 1970s and is located in the northern part of Brazil's production area, and is at a fairly high altitude for Brazil.



■Cup of Excellence

Xacara Ponto Alto Farm, Bahia, is run by a first and second generation mother-and-son family who share all the work, decision-making and responsibility for the coffee production process, from tending the coffee trees to harvesting, to processing and final preparation of the product into bags.
This coffee is a winning lot of the 2023 Brazil Cup of Excellence, and Ogawa Coffee was the sole bidder.

Selection method: Natural (non-washed)

Natural is a method of processing coffee. After harvesting the coffee cherries, they are dried without removing the pulp, and then the pulp and parchment are removed at the same time. This method is characterized by transferring the flavor to the coffee beans by drying them with the pulp still attached.
